For those who were stoked about the strudel (especially the Lemon Strudel) from Sarah Evans' Shade party last week, here's the bestest
recipe so you can make it yourself:
STRUDEL ALA GLADYS HOMER
(tweaked by me just a little!)
1. Microwave 2 c. sour cream for 1 1/2 minutes (stirring a couple times). Dump into bread machine. Add 1/2 c. WARM water, then 2/3 c. sugar, 3 TBS yeast, 1/2 c. Warm (not bubbly) butter or margarine, 6 c. flour, and lastly 2 tsp salt. 2. Let bread mix through "dough only" cycle. Dump onto floured surface & divide into 4 sections (pizza cutter works well for this). Roll oblong and fill center with pie filling (any EXCEPT pumpkin due to texture & consistency). Slice sides and braid/herringbone over. Brush milk across top & dust with granulated sugar. 3. Bake @ 350 degrees Fahrenheit for 19-22 min. Ice with almond glaze (recipe below) while warm. Slice at angle with pizza cutter. Enjoy while still warm with vanilla ice cream, home made whipped cream or easily once cooled and with your bare hands.....YUM!
ALMOND GLAZE
1. Mix 1 tsp almond extract with 1/2 c. heavy cream. Stir in powdered sugar until smooth, creamy glaze consistency is achieved. 2. Add 1/2 c. warmed butter (not bubbling). If too liquidy, then add more powdered sugar. Remember this is to be a glaze not a cake frosting (not thin elmer's glue either-go for something in between). 3. Top pastry once out of the oven...yummiest when allowed to cool just at the surface so glaze surface cracks slightly if moved/touched.
